I've started creating the excel sheet, focusing mainly on common flight controls.
Its fairly easy to do, you go into the control options in DCS, select the aircraft you want, then click "Make HTML". It makes an HTML, which you can cut and paste into Excel.

Feel free to hack it about/amend/feedback. It does show the different conventions used.
